Low Oxalate | Molasses Cookies
MOLASSES COOKIES
These cookies are darn near guilt free; they are stuffed full of such goodness! The molasses provides a source of iron, the oat and white rice flours are a lower oxalate option instead of wheat flour, and the reishi helps with boosting immunities, balancing hormones, and is an anti-inflammatory, and stress reliever.
ingredients:
- 2 cups Oat Flour
- 1 cup White Rice Flour
- 1 cup Brown Sugar
- 1 cup Butter
- 1/2 cup Molasses
- 1/2 cup White Sugar (Optional, to roll dough balls in before baking)
- 1 Egg
- 3 tsp Root & Bones Duanwood Reishi
- 2 tsp Baking Soda
- 1 tsp Vanilla
- 1 tsp Ginger
- 1 tsp Nutmeg
- 1/2 tsp Cinnamon (adjust based on your tolerance)
- 1/2 tsp Salt
Mix butter, brown sugar, molasses until well blended. Add egg and vanilla. Mix well. Add in dry ingredients and mix until combined. Scoop dough out in one inch balls, roll in white sugar (optional), place on ungreased cookie sheet, 2 inches apart. Bake for 7 to 8 minutes at 375 Degrees.
