Low Oxalate | Coconut Granola

Coconut Granola

It's been a challenge finding store bought granola that aren't full of various high oxalate seeds and nuts.  A low oxalate diet has been a key factor in keeping my vulvodynia pain under control. I created this granola recipe with ingredients, like coconut and sunflower seeds, that i've been able to tolerate well. I also added in the adaptogen He Shou Wu for it's fertility enhancing, anti-inflammatory, and antioxidant properties. It's got blood purifying and building and hormone balancing capabilities too!

ingredients:

  • 3 cups Whole Grain Rolled Oats

  • 1 cup Unsweetened Coconut Flakes

  • 2/3 cup Sunflower Seed

  • 1/2 tsp Salt

  • 3 tsp Root & Bones He Shou Wu

  • 3/4 Coconut Oil

  • 2 TBSP Honey

  • 2 TBSP Real Maple Syrup

  • 1 tsp Vanilla

Mix oats, coconut flakes, sunflower seeds, salt, and He Shou Wu in a bowl. In a separate bowl mix warm coconut oil, honey, real maple syrup, and vanilla. Add the wet mixture to the bowl of dry ingredients and stir to combine. Pour mixture evenly onto a high sided cookie sheet.

Bake at 300 Degrees for 25 minutes. Use a spatula to turn over the granola, and bake for another 15 minutes.

Tips: Warm the coconut oil over heat or in the microwave for about 35 seconds prior to mixing with the other wet ingredients. 

Enjoy over your favorite granola and fruit...
